At Madbush Falls, we are excited to be hiring for a key member of our leadership team! Vermont’s bike & ski basecamp in the Mad River Valley, Madbush Falls is home to a wildly popular 100-seat restaurant newly built in 2023, a seasonal outdoor kitchen with a pit roaster for private events, a 34-unit lodge, riverfront saunas operated by Savu Sauna, and full service bike shop operated by the Outdoor Gear Exchange. We sit trailside to a world class mountain biking network on 20 acres, with our namesake waterfall, swim hole, pond, and beautiful grounds for outdoor gatherings.
The Executive Chef will be a natural leader to take over our successful F&B program. We have garnered over 250 5-star reviews in our first 2.5 years of operations and acclaim from multiple national press outlets, including Outside Magazine as the #3 travel destination in the world.
The restaurant is our biggest attraction, our largest revenue driver, and what we are most known and loved for. We are open to the public daily for dinner and 5 days a week for breakfast. In the winter, we are bustling nightly, with a lodge frequently sold out with skiers at nearby Sugarbush & Mad River Glen. In the summer and fall, we are a popular trailhead for mountain bikers, a lodging and F&B destination for bike tour groups (such as Backroads), and one of the primary locations in the Mad River Valley for wedding groups. Our large deck might be the finest outdoor dining in our beautiful state. We regularly host private events including multi-day bike events, retreats, rehearsal dinners, and reunions.
You'll be supported by Founder Jonny Adler (also Founder of the Skinny Pancake), General Manager Dennis Richter (hospitality professional with worldwide experience at 5-star operations), veteran Sous Chef Paul Williams, Breakfast Chef Nelson Sayward, and a stellar team of talented servers, bartenders, and cooks.
Executive Chef Job Description
The Executive Chef works in collaboration with the Owner, General Manager, Sous Chef and Breakfast Chef as leader, collaborator, decision-maker and creative force behind Madbush Falls. You will be responsible for optimizing the restaurant experience for our guests, honing operational efficiency and performance, managing and motivating our team, and growing profits.
Responsibilities:
In collaboration with Owner & General Manager
Developing and implementing strategies to improve the Madbush Falls culinary experience, and increase revenue and profitability.
Prospecting, interviewing and hiring BOH staff
Strategic decision making including org chart changes, key person hiring, growth opportunities, capital investments, and other significant decisions.
Problem-solving and crisis management.
Planning and executing private parties.
Reviewing annual budget and monthly P&L’s, reviewing and approving operating expenses within that budget.
In collaboration with Sous Chef and Breakfast Chef
Creating and developing innovative menus that reflect seasonal changes and local ingredients while adhering to food cost and profit margins.
Overseeing kitchen staff, including hiring, training, and scheduling.
Ensuring compliance with health and safety regulations, including food handling and sanitation standards.
Manage inventory and ordering to ensure consistent quality and minimize waste.
Controlling costs by monitoring expenses, labor, and food costs.
Ensuring all safety standards are met to create a safe working environment.
Maintaining positive relationships with vendors and suppliers.
Human Resources Management:
Providing leadership and mentorship to BOH staff, encouraging professional growth and development.
Fostering a culture of teamwork and collaboration among all staff–lodge and restaurant.
Preparing weekly schedules in Sling for BOH staff, taking into consideration fluctuations in business to meet peak demand and control labor costs.
Prospecting, interviewing and hiring BOH staff
Managing call-outs and schedule fluctuations
Recommending and/or initiating salary, disciplinary or other staffing/human resources-related actions in accordance with company rules and policies.
Managing overall performance for each BOH team member, including setting goals in advance, regularly checking in on progress toward those goals, providing training when necessary, evaluating and recognizing good performance.
Managing Payroll, including setting new BOH restaurant employees up in our systems (Toast Payroll and Sling) and reviewing payroll every 2 weeks.
Compensation:
$65,000-$80,000 annual salary
Annual end-of-year bonus potential, subject to individual performance and overall financial success of the company.
Annual review of compensation on the anniversary of your start date.
Benefits:
“Unlimited” vacation: also known as discretionary vacation. You’ll be expected to work 5 days per week, understanding that it will involve weekends, that during busy times it may be occasionally more than 5 days, and could involve early mornings and later evenings. In turn we will not provide a certain limited number of vacation days. Time off (whether a half day or 2 weeks) will be at your discretion, coordinated with Founder, General Manager, and your team and subject to our ability to run the business in your absence.
